Ingredients
  

  • 1/2 cup Rolled oats, old fashioned oats
  • 2/3 cups Almond milk
  • 1/2 tbsp maple syrup
  • 1 tbsp Chia seeds
  • Cinnamon

Instructions
 

  • In a mason jar, add in: rolled oats, almond milk, and chia seeds. Stir to combine.
  • Add in maple syrup and cinnamon. Stir until well combined then cover and refrigerate overnight.
  • To serve, add your favorite toppings and enjoy!

Ingredients
  

  • 2 cups warm water (110-115F)
  • 1 tsp Salt
  • 4 1/2- 5 cups  All-purpose flour
  • 1 1/2 tbsp instant dry yeast
  • 1 Egg, beaten
  • 2 tbsp Melted butter, optional

Instructions
 

  • In the bowl of a stand mixer, add yeast, water, salt, and 4 cups of flour. Knead on a slow speed until the flour has started to combine. Increase speed to medium and gradually add in the remaining flour until dough pulls away from the sides of the bowl.
  • Transfer to a lightly greased mixing bowl, cover with plastic wrap, and let rise until double in size, about 30-45 minutes.
  • Divide dough in half. Roll each half into a rectangle. Roll up tightly from the long end. Place onto a lightly greased baking sheet or into a french bread pan. Cover with a kitchen towel and let rise for 30 minutes.
  • Preheat oven to 375 degrees. Use a sharp knife to cut diagonal slashes on the top of each bread loaf. Brush loaves with egg wash.
  • Bake in preheated oven for 25-30 minutes, or until golden brown. Remove from oven and brush with the melted butter. Enjoy!

Ingredients
  

  • 1 1/2 cups All purpose flour
  • 15oz Pumpkin puree
  • 2 tsp Cinnamon
  • 1 tsp Pumpkin spice
  • 1 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1/2 tsp Salt
  • 2 Eggs
  • 1/2 cup Light brown sugar, packed
  • 1/2 cup Granulated sugar
  • 1 tsp Vanilla extract
  • 1/4 cup Almond milk
  • 1/2 cup Vegetable oil

Instructions
 

  • Preheat oven to 350 degrees F.
  • In a medium mixing bowl, mix together flour, pumpkin pie spice, cinnamon, baking soda, baking powder, and salt until combined then set aside.
  • In a large mixing bowl add oil, milk, eggs, vanilla, granulated and brown sugars then whisk together. Add in the pumpkin puree and mix once more until smooth.
  • Pour the dry into the wet ingredients and mix until just combined.
  • Transfer the batter to your lined muffin tin. Bake in preheated oven for 15-18 minutes, or until a toothpick comes out clean. Let pumpkin muffins cool in the pan for about 5 minutes, then remove them and transfer muffins to a wire rack to cool completely. ENJOY!

Notes

  • Store the pumpkin muffins in an airtight container in the refrigerator for up to 1 week or in a single layer in an airtight container in the freezer for up to two months.
