Ingredients
  

  • 1lb Ground beef
  • 1 Small diced onion, plus some to top
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp pepper
  • 1 tbsp minced garlic
  • 10-12 Taco Sized Flour Tortillas
  • 15oz Can of Refried Beans
  • 10oz Can of Red Enchilada Sauce
  • 1 cup Shredded Cheddar Cheese
  • 1-2 Tomatoes, Chopped
  • 1 cup Cup Canola, Vegetable or Avocado Oil
  • sour cream to top

Method
 

  1. In a large skillet over medium heat, brown the ground beef with the diced onion until fully cooked and onions are softened.
    Drain excess grease. Add in the minced garlic and all the seasonings and mix together and let cook for about 2-3 minutes.
  2. In a separate skillet, heat the oil over medium-high heat. Fry each tortilla for about 30 seconds per side until golden and crispy. Transfer to a paper towel-lined plate to drain.
    Preheat oven to 350°F. Line a sheet pan with parchment paper.
  3. Assemble each pizza by spreading refried beans on one tortilla, adding seasoned beef, then a sprinkle of cheese. Top with a second tortilla.
    Spread enchilada sauce over the top tortilla and sprinkle with additional cheese.
    Repeat to make 5-6 pizzas or as many as you want and place on prepared sheet pan.
  4. Bake for 8-10 minutes, or until cheese is melted and bubbly.
    Remove from oven and top with chopped tomatoes, onions, and sour cream. Serve immediately. ENJOY!

Ingredients
  

  • 1lb Ground beef
  • 1 Small onion diced
  • 1 tsp Salt
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Paprika
  • 1/2 tsp Pepper
  • 1 tbsp Minced Garlic
  • 1 tbsp Tomato paste
  • 3 cups Beef broth
  • 2 Cans of Rotel diced tomatoes and green chilis with their juice, original or spicy
  • 15oz 1 Can beans, pinto or black beans, rinsed and drained
  • 15oz 1 Can of corn, drained, or 1 cup frozen corn

Method
 

  1. In a dutch oven over medium heat and add oil. Add ground beef and onion and sauté, breaking it up with a spatula for 6-7 minutes or until beef is browned.
  2. Add tomato paste, minced garlic, and all the seasonings, then sauté for another minute.
    Add beef broth, Rotel diced tomatoes with their juice, drained beans, and drained corn. Bring to a boil, then reduce to a simmer, partially cover, and simmer for 15 minutes.
    Serve with your favorite toppings. ENJOY!

Notes

Toppings: Avocado, diced Jalapeño Peppers, shredded cheese, Sour Cream, Cilantro, and tortilla strips.

For the Potato Topping:

  • 6 Potatoes
  • 1 Stick butter
  • 1/2 cup Milk
  • 1/2 tsp Salt and Pepper

For the Pie Filling:

  • 1lb Ground beef
  • 1 Small onion, diced
  • 1/2 tsp Salt
  • 1/2 tsp pepper
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Paprika
  • 2 tbsp Flour
  • 1 tbsp Minced garlic
  • 1 tbsp Tomato paste
  • 1 tbsp Worcestershire sauce
  • 12oz Bag of Frozen Vegetables
  • 1 cup Beef broth
  • 1/2 cup shredded cheese

Method
 

How to Make Potatoes:

  1. Peel, wash, and chop potatoes into small pieces. Boil the potatoes until they are fork tender. Drain the water from the potatoes and add butter, milk, and season with salt and pepper. Then mash until smooth.

How to Make the Filling:

  1. Preheat oven to 375˚F with a rack in the center. Heat a large skillet over medium heat. Add 1 Tbsp olive oil then ground beef and diced onion. Breaking up the beef with a spatula and cook until meat is just cooked through and no longer pink.
    Season with garlic powder, onion powder, paprika, salt and pepper.
  2. Sprinkle with 2 Tbsp flour and stir for 1 minute.
    Stir in minced garlic, tomato paste, Worcestershire sauce, beef broth, and frozen vegetables and let cook for about 10 minutes.

How to Assemble Shepherd’s Pie:

  1. Transfer meat and veggie mixture to a deep pie dish or 11×7 or 9×9 casserole dish. Then sprinkle shredded cheese on top.
  2. Scoop mashed potatoes over the top then spread evenly, making sure to seal the potatoes to the edge of the dish so the filling doesn’t bubble up.
  3. Place a sheet of foil under the casserole to catch any drips and bake at 375˚F on the center rack for 20-25 minutes or until potatoes start to turn golden. Cool 15 minutes before serving. ENJOY!
