Course: dinner, Main Course

Ingredients

  • 1lb Fettuccine pasta
  • 1 Stick of butter
  • 1 tbsp Minced garlic
  • 2 cups Heavy cream
  • 2 cups Parmesan cheese, add 1 cup at a time
  • 1 tsp Italian seasoning
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 tsp Paprika
  • 1/2 cup Pasta water

Method

  1. Bring a large pot of salted water to a boil. Add fettuccine and cook according to package directions. Reserve about 1/2 cup of pasta water before draining.
  2. In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 1–2 minutes, until fragrant.
Stir in the heavy cream, and season with all the seasonings and let it simmer for 5–8 minutes, allowing it to slightly thicken.
  3. Whisk in half of the Parmesan cheese until smooth and melted. Then add in the remaining cheese and continue to whisk gently until the sauce is creamy.
Add cooked fettuccine to the sauce, and pasta water, tossing to coat evenly. If the sauce is too thick, add a splash of the reserved pasta water to loosen it.
Garnish with parsley and an extra sprinkle of Parmesan if desired. Serve immediately and ENJOY!
