Ingredients
  

Chicken Tenders

  • 1 lb Chicken Tenders
  • 1 cup Panko bread crumbs
  • 1/2 cup Italian bread crumbs
  • 1/4 cup Grated Parmesan cheese
  • 1/2 cup All purpose flour
  • 1/4 tsp Pepper
  • 1/2 tsp Salt
  • 1/2 tsp Paprika
  • 2 Eggs
  • 1/2 tsp Garlic Powder
  • 1/4 cup Water

Honey Mustard Sauce

  • 1/2 cup Mayo
  • 1/4 tsp Paprika
  • 1/4 cup Dijon mustard
  • 1/4 cup Honey

Instructions
 

Chicken Tenders

  • Preheat oven to 425 degrees. Place an oven-safe baking rack on a rimmed baking sheet. Lightly spray with non-stick spray.
  • In a large bowl, add flour, salt, and pepper mix together.
  • In a medium bowl, add eggs, water and whisk together.
  • In a large bowl, add bread crumbs, paprika, garlic powder and mix together.
  • Dip chicken into flour, tossing to coat. Shake off excess. Dip into the egg wash, and then finally into panko breadcrumbs, using your hands to help panko coat chicken strips. 
  • Place breaded chicken tenders onto the prepared baking sheet. Lightly spray with cooking spray.
  • Bake for 10-15 minutes or until coating is golden brown and chicken is cooked through when chicken reaches an internal temperature of 165 degrees. If you prefer a darker coating, you can broil the chicken for an additional 2-3 minutes. Serve immediately. ENJOY!

Honey Mustard Sauce

  • Add all ingredients to a bowl and mix well.

Notes

You can also use chicken breasts: It is much cheaper to purchase boneless, skinless chicken breast, just cut into 1-inch strips. 
Air-Fryer Instructions: Bread the chicken tenders as directed and spray with cooking spray. Preheat your air-fryer to 400 degrees and cook for 5 minutes on each side.

Ingredients
  

Baking & Spices

  • 2 cups All purpose flour
  • 1 1/2 cups Granulated Sugar
  • 1 tsp Baking Soda
  • 2 tsp Baking Powder
  • 2 tsp Cinnamon
  • 1 cup Vegetable Oil
  • 15oz Pumpkin Puree

Refrigerated

  • 3 Eggs, room temperature

Instructions
 

  • Preheat oven to 350˚F. Grease two loaf pans.
  • In a large mixing bowl, whisk together the dry ingredients: 2 cups all-purpose flour, 1 1/2 cups sugar, 1 tsp baking soda, 2 tsp baking powder, and 2 tsp cinnamon.
  • In a second medium mixing bowl, whisk together the wet ingredients: 3 room temperature eggs, 1 cup oil, and pumpkin puree.
  • Pour wet ingredients over dry ingredients then whisk together until smooth. Divide evenly between 2 prepared loaf pans and bake at 350˚F for 50-55 minutes, or until a toothpick comes out clean (my oven took 50 min). Let cool in the pans for 10-15 minutes.
  • Enjoy!

Notes

Bake times can vary based on your oven and the color of your baking pan. A darker colored pan will bake faster and a lighter colored pan will take longer to bake.

Ingredients
  

Baking & Spices

  • 2 tsp Vanilla extract
  • 2 tbsp Sugar
  • 2 cups All purpose flour
  • Vegetable oil for frying
  • 2 tsp Baking Powder
  • Powder sugar
  • 1/4 tsp Salt

Refrigerated

  • 2 cups Milk, I used almond milk
  • 1 Egg

Instructions
 

  • In a large mixing bowl whisk together egg, vanilla extract, milk and sugar
  • Gently stir in flour, baking powder and salt. Stir until flour is combined. Batter will and should be a little bit lumpy.
  • Heat oil on med-high in a deep skillet. When oil is hot, do a test by dropping a bit of batter into the oil. (The batter should begin to fry calmly instantly. If it smokes, sputters or browns quickly the oil is too hot)
  • Use a ice cream scoop and scoop out the batter and drop it into the oil. (work quickly and be careful not to crowd the batter). Fry until golden on both sides.
  • Removed from oil and place a paper-towel lined plate.
  • Sprinkle generously with powdered sugar.
  • Enjoy!
