Ingredients
  

FRENCH TOAST
  • 1 Brioche bread, or any thick bread
  • 1/2 cup Pumpkin Puree
  • 1/2 cup Milk
  • 2 Eggs
  • 2 tsp Vanilla Extract
  • 1 tbsp Brown Sugar
  • 1 tsp Cinnamon
  • 1/2 tsp Pumpkin Pie Spice
  • 1-2 tablespoons unsalted butter, to cook the French toast
CINNAMON BROWN SUGAR BUTTER
  • 1 stick unsalted butter, room temperature
  • 1 tsp Cinnamon
  • 1 tbsp Brown Sugar
FOR SERVING
  • Maple Syrup
  • Powdered Sugar

Method
 

FRENCH TOAST
  1. To a large mixing bowl, make the custard to dip the bread in. Combine milk, eggs, pumpkin puree, brown sugar, vanilla extract, pumpkin pie spice, and cinnamon. Whisk really well until completely smooth.
  2. Heat a large pan over medium heat. Add a little bit of butter. If the pan is too hot, the butter will burn so make sure it's not too high.
    Dip each brioche slice in the custard quickly and place on the pan. Repeat with a few more until the pan is full but not crowded.
  3. Cook for about 2 minutes, then turn each one over and repeat so every side of the roll gets golden brown and crispy. Take off the pan and repeat with the rest of the bread.
  4. Add a dollop of the cinnamon butter, sprinkle with powdered sugar, and drizzle maple syrup on top to enjoy!
CINNAMON BUTTER
  1. To make the cinnamon butter, combine unsalted butter, cinnamon, brown sugar. Mix together until smooth and set aside.

Ingredients
  

  • 2 cups All purpose flour
  • 1 1/2 cups Granulated Sugar
  • 1 tsp  Baking Soda
  • 2 tsp Baking Powder
  • 2 tsp Cinnamon
  • 1 cup Vegetable Oil
  • 3 Eggs, room temperature
  • 15 oz Pumpkin Puree
  • 1 cup Semi-sweet Morsels, more for topping

Method
 

  1. Preheat oven to 350˚F. Grease two loaf pans.
  2. In a large mixing bowl, whisk together the dry ingredients: 2 cups all-purpose flour, 1 1/2 cups sugar, 1 tsp baking soda, 2 tsp baking powder, and 2 tsp cinnamon.
  3. In a second medium mixing bowl, whisk together the wet ingredients: 3 room temperature eggs, 1 cup oil, and pumpkin puree.
  4. Pour wet ingredients over dry ingredients then whisk together until smooth. Then fold in semi-sweet morsels.
  5. Divide evenly between 2 prepared loaf pans and top with more chocolate. Bake at 350˚F for 50-55 minutes, or until a toothpick comes out clean (my oven took 50 min). Let cool in the pans for 10-15 minutes. ENJOY!

Notes

Bake times can vary based on your oven and the color of your baking pan. A darker colored pan will bake faster and a lighter colored pan will take longer to bake.
