Combine graham cracker crumbs, melted butter and 1 tbsp of sugar. Divide evenly between 4 10-ounce wide-mouth jars; press firmly into even layer.
In a medium mixing bowl, beat heavy cream until it holds peaks; set aside. In a large mixing bowl, beat together cream cheese, 2 tbsp sugar, vanilla extract and lemon zest until smooth and creamy. Fold in whipped cream gently.
Divide cream cheese mixture between jars; smooth top place cover on. Refrigerate at least 6 hours or overnight.
Top cheesecake jars with strawberries or any fruit just before serving. ENJOY!
