1cupShredded cheese: cheddar, pepper jack, or mozzarella
Onion, sliced
Red Bell Pepper, sliced
Jalapeno, sliced
Instructions
Preheat a large non-stick skillet to medium-high heat. Butter a single side of one tortilla with butter and place it in the hot pan. Sprinkle cheese, onions, pepper, jalapeno, and chicken and place the second tortilla on top. Let it cook for 2-3 minutes or until cheese is melted.
When the cheese has begun to melt and the bottom tortilla is browning slightly, flip the quesadilla over to cook the other side. Continue to cook until all the cheese is melted and the tortilla is crisp around the edges.
Using a spatula, transfer the quesadilla to a serving plate and cut into 4 wedges while it is hot and serve warm. Repeat as desired. Enjoy!
