1/2cupsCooked Chicken, shredded (I used Rotisserie chicken)
1/2cupZucchini, grated
1Red Bell Pepper
1/4cupGreen onions, chopped
1/4cupAll Purpose flour
1tspSalt
1/4tspPepper
1Egg
1/3cupCarrots, grated
2-3Tbsp Olive Oil, for frying
Instructions
In a large bowl, mix all ingredients until well incorporated.
In a large skillet add 2-3 tbs. of olive oil on medium high heat. Then using a spoon or ice cream scooper, scoop about a tablespoon of batter onto the pan for each Pattie. Use a spoon to flatten them into a patty form.
Cook until golden brown and flip on the other side and cook for a few minutes.
Serve with your favorite sauce, and ENJOY!
Notes
I love using store bought rotisserie chicken, It's delicious and will save so much time.
Don't forget to squeeze out the water from the zucchini after grating.
