Chicken Veggie Patties

Ingredients
  

  • 1/2 cups Cooked Chicken, shredded (I used Rotisserie chicken)
  • 1/2 cup Zucchini, grated
  • 1 Red Bell Pepper
  • 1/4 cup Green onions, chopped
  • 1/4 cup All Purpose flour
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 1 Egg
  • 1/3 cup Carrots, grated
  • 2-3 Tbsp Olive Oil, for frying

Method
 

  1. In a large bowl, mix all ingredients until well incorporated.
  2. In a large skillet add 2-3 tbs. of olive oil on medium high heat. Then using a spoon or ice cream scooper, scoop about a tablespoon of batter onto the pan for each Pattie. Use a spoon to flatten them into a patty form.
  3. Cook until golden brown and flip on the other side and cook for a few minutes.
  4. Serve with your favorite sauce, and ENJOY!

Notes

  • I love using store bought rotisserie chicken, It's delicious and will save so much time.
  • Don't forget to squeeze out the water from the zucchini after grating.
