- 1lb Ground beef
- 1 Small diced onion, plus some to top
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1/2 tsp pepper
- 1 tbsp minced garlic
- 10-12 Taco Sized Flour Tortillas
- 15oz Can of Refried Beans
- 10oz Can of Red Enchilada Sauce
- 1 cup Shredded Cheddar Cheese
- 1-2 Tomatoes, Chopped
- 1 cup Cup Canola, Vegetable or Avocado Oil
- sour cream to top
In a large skillet over medium heat, brown the ground beef with the diced onion until fully cooked and onions are softened. Drain excess grease. Add in the minced garlic and all the seasonings and mix together and let cook for about 2-3 minutes. In a separate skillet, heat the oil over medium-high heat. Fry each tortilla for about 30 seconds per side until golden and crispy. Transfer to a paper towel-lined plate to drain.Preheat oven to 350°F. Line a sheet pan with parchment paper. Assemble each pizza by spreading refried beans on one tortilla, adding seasoned beef, then a sprinkle of cheese. Top with a second tortilla.Spread enchilada sauce over the top tortilla and sprinkle with additional cheese.Repeat to make 5-6 pizzas or as many as you want and place on prepared sheet pan. Bake for 8-10 minutes, or until cheese is melted and bubbly.Remove from oven and top with chopped tomatoes, onions, and sour cream. Serve immediately. ENJOY!
