In a skillet over medium-high heat cook and crumble the sausage and diced onions until the onions are softened and the sausage is cooked through, for about 8-10 minutes. Drain grease. Then add the garlic and cook for 1 minute.
Transfer the cooked sausage to your crockpot, the tortellini, chicken broth, rotel diced tomatoes, and all the seasonings. Stir everything together gently.
Cover the crockpot and cook on high for 2 hours.
Gently stir in the spinach and cream cheese. Cover and cook on high for 30 minutes. ENJOY!
