Bring a wok or large skillet over medium/high heat and add 2 Tbsp oil. Add the onions and sauté for 2-3 minutes.
Make a hole in the middle and add the eggs, salt, and cook until scrambled. While mixing in the onions into the eggs.
Add in the rice and mix in with the scrambled eggs. Drizzle soy sauce and sesame oil over the rice and stir well. Sauté for 2-3 minutes. Mix in the vegetables and sauté for 1-2 minutes.
Add in green onion, sauté for another 1-2 minutes. Add more soy sauce and sesame oil to taste. ENJOY!
