Preheat oven to 350 degrees
Place chicken breasts on sheet and season both sides of chicken with salt, pepper, and garlic powder
Bake chicken in oven for 25 minutes or until chicken gets to internal temperature of 165
Time to shred chicken can use stand mixer place 1 chicken breast at time, or can shred anyway that's easier for you
Place shredded chicken in pan and add cream of chicken and cook for 2 minutes on medium heat
Add green chile to chicken mixture and cook for about 3 minutes stir together on medium heat
Add olive oil to a pan and cook the 12 corn tortillas making sure to not over cook them
In a casserole dish place 6 corn tortillas on bottom and pour the chicken mixture over and top with some shredded cheese
Add the remaining corn tortillas over and topped with remaining shredded cheese
In a preheated 350 degree oven bake the enchiladas for 10 minutes or until cheese is fully melted, make sure to keep an eye on it to not burn the cheese
