- In a large skillet over medium heat, cook ground beef with diced onions, breaking up the beef with a spoon as it cooks. Cook until no longer pink. Drain any excess grease. Season with garlic powder, onion powder, paprika, salt, and pepper.
- Mix in some of that red enchilada sauce and some shredded cheese and continue to cook until cheese is melted.
- In a 13×9-inch casserole dish pour some red enchilada sauce on the bottom and spread out evenly. Fill a tortilla with the ground beef mixture, roll it up and place into casserole dish. Repeat for the other tortillas until you no longer have any ground beef left.
- Pour the remaining red enchilada sauce over the top and top with the remaining shredded cheese. Bake in a preheated 350 degree oven for 15-20 minutes, or until cheese is melted. Let sit 5 minutes before serving. Garnish as desired with optional toppings like sour cream, avocado, sliced green onions or cilantro. ENJOY!
