Ground Beef Enchiladas

Ingredients
  

  • 1lb Ground Beef
  • 1 Small onion, diced
  • 1 tsp Garlic powder
  • 1 tsp onion powder
  • 1 tsp Paprika
  • Salt and pepper to taste
  • 1 28oz can of Red Enchilada Sauce ( I use Old El Paso) Divided
  • 2 cups Shredded cheese (divided)
  • 8-10 Flour Tortillas

Method
 

  1. In a large skillet over medium heat, cook ground beef with diced onions, breaking up the beef with a spoon as it cooks. Cook until no longer pink. Drain any excess grease.
    Season with garlic powder, onion powder, paprika, salt, and pepper.
  2. Mix in some of that red enchilada sauce and some shredded cheese and continue to cook until cheese is melted.
  3. In a 13×9-inch casserole dish pour some red enchilada sauce on the bottom and spread out evenly.
    Fill a tortilla with the ground beef mixture, roll it up and place into casserole dish. Repeat for the other tortillas until you no longer have any ground beef left.
  4. Pour the remaining red enchilada sauce over the top and top with the remaining shredded cheese.
    Bake in a preheated 350 degree oven for 15-20 minutes, or until cheese is melted. Let sit 5 minutes before serving. Garnish as desired with optional toppings like sour cream, avocado, sliced green onions or cilantro. ENJOY!
