Put the self-rising flour and Greek yogurt in the bowl of a stand mixer, mix on low speed using the dough hook attachment until combined.
Then knead at a medium speed for a few minutes until a ball forms. If the dough is to sticky, add more self-rising flour a little at a time.
Turn the dough out onto a floured surface. Sprinkle the top with some flour, knead a couple of times, and form the dough into a ball. Then cut the dough ball into four wedges.
Roll each piece of dough into a long rope. Cut each rope into small segments.
Place them on a baking sheet that's been prepared with parchment paper. Bake at 350 degrees for 7-10 minutes or until golden brown.
Brush pretzel bites with melted butter, and sprinkle with pretzel salt or kosher salt.

Cheese sauce
In a sauce pan on medium high heat add the butter and let melt.
Whisk in the flour and cook for a minute.
Whisk in the milk and bring to a simmer.
Add in the cheese and continue to cook until cheese is fully melted.
