Carrot Cake Loaf
This Carrot Cake loaf is a delicious and moist bread, easier to make compared to a layered carrot cake, and filled with carrot cake flavor. Topped with a generous layer of cream cheese frosting. This is everyone’s favorite carrot cake!
Carrot Cake Loaf Recipe
Ingredients
Cake
- 1 1/2 cups Flour
- 1/2 tsp Salt
- 1 tsp Cinnamon
- 1 tsp Baking Powder
- 1/2 tsp Baking soda
- 1 cup Granulated Sugar
- 3 Eggs
- 1/4 cup Sour Cream
- 1 tsp Vanilla extract
- 1 cup Shredded carrots
- 2/3 cups Vegetable oil
Frosting
- 8 oz Cream cheese
- 1/4 cup Butter, softened
- 1/2 tsp Vanilla extract
- 1 cup Powdered sugar
Instructions
Cake
- Preheat the oven to 350°FGrease and line 8×4” loaf pan with parchment paper.
- In a medium mixing bowl, mix the dry ingredients together: flour, cinnamon, salt, baking powder, and baking soda.
- In a large mixing bowl, whisk together oil, eggs, sugar, vanilla extract, and sour cream. Add dry ingredients and mix until just combined. Fold in the carrots. Don't over mix.
- Pour into the prepared loaf pan and smooth out the top.
- Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean. Let cool completely and then make the frosting.
Frosting
- In a medium mixing bowl, using a hand held mixer beat together the butter and cream cheese. Add the vanilla extract and sugar and Beat until smooth. Spread the frosting on top of the cooled carrot cake. Slice and enjoy!
