Mixed Berry Bread Recipe
Ingredients

- 1 cup raspberries
- 1 cup blackberries
Refrigerated
- 2 Eggs
Baking & Spices
- 2 cups All purpose Flour
- 2 tsp Baking powder
- 1 cup White Sugar
- 1 tbsp Vanilla Extract
Dairy
- 1 cup Milk
- 1/2 cup Butter, salted
Glaze
- 4 1/2 tsp Heavy cream
- 3 tbsp Melted butter
- 1/2 cup Powder sugar
- 1 tsp Vanilla extract
Instructions
Mixed Berry Bread
- Preheat your oven to 350 degrees convection bake
- Grease a 9 inch loaf pan
- Cream together the sugar and butter
- Add the eggs, milk and vanilla beating well
- Add the dry ingredients and beat until well combined.
- Wash and cut the berries and then mix by hand gently with a spatula.
- Pour the batter into your loaf pan and bake for 50 minutes or until a cake tester comes out clean.
- Allow to cool in pan for about 10 minutes before removing
Glaze
- Combine all the ingredients in a microwavable bowl and mix together
- Microwave for 30 seconds
- Whisk together and pour over bread
- Enjoy!
Notes
If the inside of your bread is still not cooked through that is usually a good sign that you need to keep it in the oven longer. If it is browned on the outside but still uncooked inside just cover with foil and return to oven until a cake tester comes out clean. Make sure to pour the glaze over right away after microwaving and whisking before the glaze starts to thicken. Enjoy!
