Ingredients
  

Donut Dough
  • 2/3 cups Warm milk 105 to 110F
  • 1 Packet Instant Yeast (about 2 1/4 tsp)
  • 1/2 tsp Sugar
  • 1/4 cup Unsalted butter, melted
  • 1/4 cup Granulated sugar
  • 1/4 tsp Salt
  • 2 1/2 cups All Purpose Flour
  • 2 eggs at room temperature
  • 1/2 tsp Vanilla Extract
  • Oil for frying, vegetable oil
Glaze
  • 6 tbsp Milk (90mL)
  • 3 cups Powdered Sugar (360g)
  • 1 tsp Vanilla Extract

Method
 

For the Dough
  1. In a small bowl or measuring glass, whisk together the warm milk, yeast, and 1 teaspoon sugar. Let sit until bubbly, 5 to 10 minutes.
  2. In a medium mixing bowl, whisk together the flour and salt.
  3. In large mixing bowl, whisk together melted butter, eggs, and ¼ cup sugar until smooth. Stir in yeast mixture until combined. Stir in flour mixture until a shaggy dough forms. On a lightly floured surface, knead the dough until smooth and elastic (dough may be slightly tacky), for about 5 minutes.
    Place the dough in a large, lightly oiled bowl. Cover and let rise in a warm place until doubled in size, for about 1 hour.
  4. Line a baking sheet with parchment paper.
    Turn dough out onto a floured surface. Roll dough with a rolling pin to 1/4” to 1/3” thick and use donut cutter to make 12 donuts and donut holes. Gently press together scraps and re-roll to get another donut if desired.
  5. Place donuts and donut holes on your prepared parchment lined baking sheet, with just enough space so they are not touching. Cover with a towel or parchment paper and let donuts rise again at room temperature for 45 minutes until puffed.
  6. Fill a Dutch oven with 2-inches of oil. Heat over medium heat until a deep-fry thermometer registers 350F.
    Working a few at a time, fry donuts in the hot oil until golden brown, about 1 minute per side, constantly stirring, for the donut holes. Transfer to the wire rack to drain.
Glaze
  1. In a medium mixing bowl, whisk together powdered sugar, milk, and vanilla until smooth. Dip warm donuts and donut holes into the glaze and return to the write rack to set. ENJOY!

Salad
  • 1 Cucumber, cut
  • 2 cups Cherry Tomatoes, cut in half
  • 8oz Mozzarella balls
  • 1 Avocado, sliced
  • 1/2 Red Onion, chopped
  • 1/3 cup Basil leaves
Dressing
  • 3 tbsp Extra virgin olive oil
  • 1/4 tsp Pepper
  • 1/2 tsp Salt
  • 1 tsp Minced garlic
  • 1 tbsp balsamic vinegar

Method
 

  1. In a large serving bowl, add cucumber, avocado, onion, tomatoes, basil, and mozzarella.
  2. In a small mixing bowl, whisk the olive oil, balsamic vinegar, garlic, salt, and pepper together until combined.
    Drizzle the dressing over the salad and toss to combine and serve. Enjoy!

  • 2 tbsp Fresh Lemon Juice

  • 2 cups All Purpose Flour
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Salt
Glaze
  • 1 cup Powdered Sugar
  • 1 tbsp Lemon Juice
  • 1 tbsp Milk

Method
 

Cake
  1. Preheat the oven to 350°. Lightly spray a 9×5-inch loaf pan with baking spray and line with parchment paper.
    In a medium mixing bowl, whisk together the flour, baking powder, and salt.
  2. In a large mixing bowl, cream together the butter and sugar on medium speed until light and fluffy, about 3 minutes. Beat in the lemon juice and zest. Add the eggs one at a time, beating until well combined before adding the next one. Stop and scrape down the bowl as needed.
  3. With the mixer on low, add in the flour mixture alternating with the milk. Then pour the batter into the prepared loaf pan.
    Bake for 55 to 60 minutes, or until a tooth pick comes out clean. Remove from the pan and let cool completely on a wire rack.
Glaze
  1. In a medium mixing bowl, whisk together the powdered sugar, lemon juice, and milk until smooth. Drizzle over pound cake before serving. ENJOY!

Notes

Store any leftovers in an airtight container at room temperature for up to 3 days.
