Zucchini Bites Recipe

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes
Servings: 4
Course: Appetizer, Side Dish
Cuisine: American

Ingredients

  • 2 Sliced Zucchini
  • 1/2 cup Flour
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1 cup Italian Panko bread crumbs
  • Olive oil for spraying
  • Marinara sauce for dipping

Method

  1. Wash and slice Zucchini
  2. Create an assembly line: In the first bowl, mix together: flour, salt, and pepper. In the second bowl, beat two eggs with a fork. In the third bowl, add panko bread crumbs.
Dredge one of your zucchini slices fully in the flour mixture, tapping off the excess.
  3. Next, use a fork to dip floured zucchini in the beaten egg mixture, turning to fully coat, and let the excess egg drip back into the bowl before transferring to breadcrumbs.
Move the zucchini to the bread crumbs bowl and coat all sides of the zucchini with crumbs. It helps to scoop the breading on top of the zucchini pieces so they are easier to flip and coat. Transfer to a baking dish and repeat with the remaining zucchini.
  4. Place in air fryer tray and spray both sides with oil. Cook at 350 for 10 minutes. No need to flip half way. Serve with favorite sauce. ENJOY!
