Strawberry Cheesecake Stuffed French Toast

Ingredients
  

Strawberry Filling
  • 8 oz Cream Cheese, softened
  • 1/4 cup Powdered sugar
  • 1 tsp Vanilla Extract
  • 1/2 cup Strawberries, sliced
French Toast
  • 8 Slices thick brioche bread
  • 4 Eggs
  • 1/2 cup Milk
  • 1 tsp Vanilla Extract
  • 1/2 tsp Cinnamon
  • Butter for Frying
Topping (Optional)
  • powdered sugar, fresh berries, syrup, whipped cream, etc.

Method
 

Strawberry Cheesecake Filling
  1. In a large mixing bow, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
    Gently fold in the strawberries until evenly distributed.
French Toast
  1. In a medium mixing bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
  2. Spread about 2 tablespoons of the strawberry cheesecake filling onto one slice of bread, then top with another slice of bread to create a sandwich. Repeat with the remaining slices of bread. and filling.
  3. Dip each stuffed french toast into the egg mixture, coating both sides evenly.
    Heat a skillet over medium heat and melt some butter. Place the stuffed french toast in the skillet and cook until golden brown on both sides about 2-3 minutes per side.
  4. Top with maple syrup and ENJOY!
