Snowball Cookies Recipe

Ingredients
  

Cookies
  • 1 cup Butter, softened
  • 2 cups All purpose Flour
  • 1/4 tsp Salt
  • 1 tsp Vanilla Extract
  • 1 cup Pecans, finely chopped
  • 1/2 cup Powdered sugar
Coating
  • 1 cup Powdered sugar

Method
 

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper. Set aside.
  2. In a large mixing bowl, using an electric hand mixer or stand mixer, beat together the butter, powdered sugar, and vanilla extract until smooth.
  3. Add in the flour, pecans, and salt. Mix until evenly combined.
  4. Scoop and roll the dough into about 1 inch balls and place them on the baking sheet (a small ice cream scoop makes it easy and exact). You should get about 28-30 cookies.
  5. Bake the cookies until they are lightly golden, about 12 to 14 minutes.
  6. Transfer cookies to wire rack to cool for 5 minutes or until cool enough to handle and fill a bowl with powdered sugar and roll the cookies in it you want them to be warm (not hot). Place back onto wire rack to cool completely.
  7. Once the cookies have cooled completely, roll the cookies one last time in the powdered sugar. ENJOY!

  • 1 1/2 Cup Flour
  • 1/4 tsp Salt
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1 1/2 tsp Vanilla Extract
  • 1/2 Cup Sugar
  • 1/2 Cup Brown Sugar
  • 1 Cup Milk Chocolate chips, Semisweet
  • 1 Cup White Chocolate chips
Dairy
  • 1/2 Cup Butter

Method
 

  1. In a large bowl or stand mixer cream together the butter and sugars until light and fluffy
  2. Mix in eggs and vanilla extract, followed by the salt, baking soda, and baking powder
  3. Scrape bowl as needed
  4. Mix in the flour until fully Incorporated and no streaks remain
  5. Stir in chocolate chips with spatula
  6. Chill cookie dough for 1 hour or until it is thoroughly chilled
  7. Preheat oven to 350 degrees
  8. Line a baking sheet with a non stick baking paper
  9. Scoop dough using a large cookie scoop, spacing 2-3 inches apart on prepared baking sheet
  10. Bake for 12 min
  11. Transfer to a wire rack to cool
  12. Store in a airtight container for up to several days or freeze for later
