Ingredients
  

  • 2 Sliced Zucchini
  • 1/2 cup Flour
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1 cup Italian Panko bread crumbs
  • Olive oil for spraying
  • Marinara sauce for dipping

Instructions
 

  • Wash and slice Zucchini
  • Create an assembly line: In the first bowl, mix together: flour, salt, and pepper. In the second bowl, beat two eggs with a fork. In the third bowl, add panko bread crumbs.
    Dredge one of your zucchini slices fully in the flour mixture, tapping off the excess.
  • Next, use a fork to dip floured zucchini in the beaten egg mixture, turning to fully coat, and let the excess egg drip back into the bowl before transferring to breadcrumbs.
    Move the zucchini to the bread crumbs bowl and coat all sides of the zucchini with crumbs. It helps to scoop the breading on top of the zucchini pieces so they are easier to flip and coat. Transfer to a baking dish and repeat with the remaining zucchini.
  • Place in air fryer tray and spray both sides with oil. Cook at 350 for 10 minutes. No need to flip half way. Serve with favorite sauce. ENJOY!

Ingredients
  

  • 1/2 cup Unsalted butter, softened
  • 1/2 cup Granulated sugar
  • 1/2 cup Brown Sugar
  • 1 1/2 cups Flour
  • 1/2 cup Pumpkin puree
  • 1 tsp Vanilla Extract
  • 1 Egg
  • 1 tsp Cinnamon
  • 1/2 tsp Salt
  • 1 cup Chocolate chips
  • 1/2 tsp Baking Powder
  • 1/4 tsp Baking Soda

Instructions
 

  • In a medium mixing bowl, mix together the flour, cinnamon, salt, baking soda and baking powder. Set aside.
  • In a large mixing bowl, cream together the butter, sugar and brown sugar with a hand-held mixer. Add vanilla, pumpkin puree and egg and beat until combined and light and fluffy.
  • Then add the dry ingredient mixture and beat until combined. 
  • Fold in the chocolate chips. Scoop the cookie dough onto your prepared cookie sheet, making sure to evenly space them.
    Chill in refrigerator for 30 minutes.
  • Bake in preheat oven to 375 degrees F for 10 minutes, or until cookies look set. Let cool for 3 minutes, ENJOY!

  • 2 Eggs
  • 1/2 cup Milk
  • 1/2 cup Vegetable Oil
  • 1 tsp Vanilla Extract
  • 3/4 cup Sour Cream
  • 1/2 cup Cocoa powder
  • 1 tsp Baking Soda
  • 1 1/2 tsp Baking Powder
  • 1 cup Granulated Sugar
  • 1/2 tsp Salt
  • 2 cups All Purpose Flour
  • 1 cup Semi-sweet chocolate chips, plus more to top

Instructions
 

  • Preheat oven to 425F and line a muffin pan with liners.
  • In a large mixing bowl, sift the flour, cocoa powder, baking soda, baking powder, salt, and sugar and whisk together and set aside.
  • In a medium mixing bowl, combine the eggs, vanilla, vegetable oil, sour cream, and milk then whisk together.
  • Pour the wet ingredients into the dry and fold together using a spatula, mixing until almost combined. Sprinkle in the chocolate chips and mix until the batter is just combined and the chocolate chips have been distributed.
  • Fill the muffin papers to the top and sprinkle with the reserved chocolate chips. Bake at 425F for 6 minutes then reduce to 350F and continue baking for about 14 minutes or until a toothpick comes out clean. Let cool for 5 minutes, before transferring to a cool rack. ENJOY!

Notes

  • The muffins will keep well for up to 3-5 days in an airtight container or can be frozen for up to 3 months.
