Sausage Tortellini Soup

Prep Time 5 minutes

Total Time 22 minutes
Servings: 3
Course: Main Course

Ingredients

  • 1lb ground Italian sausage
  • 1 yellow onion
  • 1 tbsp Minced garlic
  • 3 tbsp Flour
  • 1 tsp dried basil
  • 1/2 tsp oregano
  • 1/2 tsp Italian seasoning
  • 1/4 tsp Paprika
  • 2 cups Baby spinach
  • 1 cup Heavy cream
  • 5 cups Chicken broth
  • 18oz Frozen Tortellini
  • Salt and Pepper to taste

Method

  1.  In a Dutch oven, over medium- high heat cook and crumble the sausage and diced onions until the onions are softened and the sausage is cooked through, for about 8-10 minutes. Drain grease. Then add the garlic and cook for 1 minute.
  2. Add the flour and cook for 1-2 minutes to remove the raw flour taste.
  3. Add basil, oregano, Italian seasoning, and paprika stir to combine. Add the chicken broth and use a wood spatula to “clean” the bottom of the pot. Add the heavy cream. Bring to a boil, reduce to a simmer.
  4. Add the baby spinach and tortellini and simmer for 3-5 minutes. (If your tortellini needs longer cooking time, add the tortellini first, then the baby spinach during the last 5 minutes.) Add salt and pepper to taste. ENJOY!
