Method
- In a large mixing bowl combine, flour, salt, baking soda, baking powder, cinnamon, ginger. Whisk until combined.
- In a medium mixing bowl, add white sugar and oil. Mix until creamy. Then mix in brown sugar, eggs, & vanilla.
- Add the wet ingredients into the dry ingredients and stir until combined.
- Grate the zucchini and fold it into the batter.
- Pour batterĀ into two prepared loaf pans. Bake in a 325 degree preheated oven for 45-60 minutes or until a toothpick comes out clean.
