Chicken Veggie Patties
These Chicken Veggie Patties are super juicy and flavorful. They are one of my favorite HIDDEN vegetable recipes and they are so easy to make!
Chicken Veggie Patties
Ingredients
- 1/2 cups Cooked Chicken, shredded (I used Rotisserie chicken)
- 1/2 cup Zucchini, grated
- 1 Red Bell Pepper
- 1/4 cup Green onions, chopped
- 1/4 cup All Purpose flour
- 1 tsp Salt
- 1/4 tsp Pepper
- 1 Egg
- 1/3 cup Carrots, grated
- 2-3 Tbsp Olive Oil, for frying
Instructions
- In a large bowl, mix all ingredients until well incorporated.
- In a large skillet add 2-3 tbs. of olive oil on medium high heat. Then using a spoon or ice cream scooper, scoop about a tablespoon of batter onto the pan for each Pattie. Use a spoon to flatten them into a patty form.
- Cook until golden brown and flip on the other side and cook for a few minutes.
- Serve with your favorite sauce, and ENJOY!
Notes
- I love using store bought rotisserie chicken, It’s delicious and will save so much time.
- Don’t forget to squeeze out the water from the zucchini after grating.
