Breakfast Egg Muffins Recipe

Breakfast Egg Muffins Recipe
Ingredients
- 12 Eggs
- 1 lb Sausage
- 1 Bell Pepper, I used a red bell pepper
- 1/4 cup Green onion, chopped
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1/2 tsp Garlic Powder
- 1 cup Shredded Cheese, I used Colby jack cheese
Instructions
- Preheat oven to 350°F. Spray a 12-cup muffin tin with nonstick spray.
- In a large skillet over medium-high heat add sausage and cook until the sausage is browned. For 4-6 minutes. Add bell pepper and sauté for 2 minutes, or until the pepper is tender. Take skillet off heat and place aside.
- In a large 4-cup measuring cup add the eggs and season with salt, pepper, and garlic and whisk together.
- Fill each muffin cup about 1/2 full with the sausage and pepper mixture. Then add some chopped green onions. Pour the egg mixture into each muffin cup. Sprinkle the tops with cheese.
- Bake for 20-25 minutes, or until the top is completely set. Let cool for a few minutes and ENJOY!
