Green Chile Enchiladas
These green chile chicken enchiladas are loaded with chicken, green chile, and shredded cheese its a super easy recipe.

Ingredients
Meat
- 3 Chicken breasts

- 5 Green chilies

- Pepper
- Garlic Powder
- Olive oil

- 12 Corn tortillas
Dairy
- 2 cups Shredded cheese
Prepared
- 1 can Family size cream of chicken
Instructions
- Preheat oven to 350 degrees
- Place chicken breasts on sheet and season both sides of chicken with salt, pepper, and garlic powder
- Bake chicken in oven for 25 minutes or until chicken gets to internal temperature of 165
- Time to shred chicken can use stand mixer place 1 chicken breast at time, or can shred anyway that's easier for you
- Place shredded chicken in pan and add cream of chicken and cook for 2 minutes on medium heat
- Add green chile to chicken mixture and cook for about 3 minutes stir together on medium heat
- Add olive oil to a pan and cook the 12 corn tortillas making sure to not over cook them
- In a casserole dish place 6 corn tortillas on bottom and pour the chicken mixture over and top with some shredded cheese
- Add the remaining corn tortillas over and topped with remaining shredded cheese
- In a preheated 350 degree oven bake the enchiladas for 10 minutes or until cheese is fully melted, make sure to keep an eye on it to not burn the cheese
