Green Chile & Potato Stew- Instant Pot Recipe

This meatless green chile and potato stew is filling, delicious, and incredibly easy to make in your instant pot. Its a New Mexico favorite!

Ingredients
  

Produce

  • 4 Potatoes, diced 1/2 inch
  • 4 Green Chile

Canned Goods

  • 1 32oz Container of chicken stock

Baking & Spices

  • 1 tsp Garlic Powder
  • 1/4 tsp Cumin
  • 1 tsp Salt
  • 1 tsp Pepper

Instructions
 

  • First need to rinse out the seeds in the chile and then cut into 1/2 inch, then put aside
  • Peel the potatoes, rinse and then cut into 1/2 inch
  • Place the chiles, potatoes, chicken stock, garlic and cumin into your instant pot and place lid onto your pot
  • Press manual and set for 8 minutes
  • Once the pot beeps, allow it to release naturally for 5 minutes, then release the rest of the pressure with a quick release
  • Add salt and pepper for taste
  • Serve in a bowl with optional cheese on top and tortilla on the side
