Green Chile & Potato Stew- Instant Pot Recipe

This meatless green chile and potato stew is filling, delicious, and incredibly easy to make in your instant pot. Its a New Mexico favorite!

- First need to rinse out the seeds in the chile and then cut into 1/2 inch, then put aside
- Peel the potatoes, rinse and then cut into 1/2 inch
- Place the chiles, potatoes, chicken stock, garlic and cumin into your instant pot and place lid onto your pot
- Press manual and set for 8 minutes
- Once the pot beeps, allow it to release naturally for 5 minutes, then release the rest of the pressure with a quick release
- Add salt and pepper for taste
- Serve in a bowl with optional cheese on top and tortilla on the side
