Ingredients
  

  • 1 1/2 cups All purpose flour
  • 15oz Pumpkin puree
  • 2 tsp Cinnamon
  • 1 tsp Pumpkin spice
  • 1 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1/2 tsp Salt
  • 2 Eggs
  • 1/2 cup Light brown sugar, packed
  • 1/2 cup Granulated sugar
  • 1 tsp Vanilla extract
  • 1/4 cup Almond milk
  • 1/2 cup Vegetable oil

Method
 

  1. Preheat oven to 350 degrees F.
  2. In a medium mixing bowl, mix together flour, pumpkin pie spice, cinnamon, baking soda, baking powder, and salt until combined then set aside.
  3. In a large mixing bowl add oil, milk, eggs, vanilla, granulated and brown sugars then whisk together. Add in the pumpkin puree and mix once more until smooth.
  4. Pour the dry into the wet ingredients and mix until just combined.
  5. Transfer the batter to your lined muffin tin. Bake in preheated oven for 15-18 minutes, or until a toothpick comes out clean. Let pumpkin muffins cool in the pan for about 5 minutes, then remove them and transfer muffins to a wire rack to cool completely. ENJOY!

Notes

  • Store the pumpkin muffins in an airtight container in the refrigerator for up to 1 week or in a single layer in an airtight container in the freezer for up to two months.

Ingredients
  

  • 3 ripe bananas
  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup granulated sugar
  • 2 Eggs, room temperature
  • 1 1/2 cups All purpose flour
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1/2 tsp Vanilla extract
  • 1/2 tsp Ground cinnamon
  • 1/2 cup Pecans, chopped

Method
 

  1. Preheat the oven to 350°F. Grease and flour a bread loaf pan.
  2. In a large mixing bowl, cream together softened butter and sugar.
  3. In a small mixing bowl, mash the bananas with a fork until the consistency of chunky applesauce and add them to the batter along with the eggs, mixing until blended. 
  4. In a small mixing bowl, whisk together: flour, baking soda and salt then add to batter.
    Add vanilla extract and mix in chopped pecans. Pour into prepared loaf pan. Bake at 350˚F for 55-60 min or until a toothpick comes out clean. Let bread rest for about 10 minutes before transferring to a wire rack to cool. ENJOY!

Ingredients
  

  • 4 Roma tomatoes, halved or quartered
  • 14.5oz Can of Diced tomatoes, drained
  • 1/2 Red onion, cut
  • 1 Jalapeno pepper, cut in half, no seeds
  • Handful fresh cilantro
  • 2 cloves garlic
  • Juice from 1 lime
  • 1/2 tsp chili powder
  • 1 tsp Salt

Method
 

  1. Place all of the ingredients into a food processor or a high-speed blender. Pulse until all ingredients are chopped and combined.
    Leave salsa covered and refrigerated for at least a couple of hours before you are ready to serve. This will bring all the flavors together. ENJOY!

Notes

  • Don’t over blend your salsa. You want a fine texture, but not a puree.
