Ingredients
  

  • 12 Eggs
  • 1 lb Sausage
  • 1 Bell Pepper, I used a red bell pepper
  • 1/4 cup Green onion, chopped
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 tsp Garlic Powder
  • 1 cup Shredded Cheese, I used Colby jack cheese

Method
 

  1. Preheat oven to 350°F. Spray a 12-cup muffin tin with nonstick spray.
  2. In a large skillet over medium-high heat add sausage and cook until the sausage is browned. For 4-6 minutes. Add bell pepper and sauté for 2 minutes, or until the pepper is tender. Take skillet off heat and place aside.
  3. In a large 4-cup measuring cup add the eggs and season with salt, pepper, and garlic and whisk together.
  4. Fill each muffin cup about 1/2 full with the sausage and pepper mixture. Then add some chopped green onions. Pour the egg mixture into each muffin cup. Sprinkle the tops with cheese.
  5. Bake for 20-25 minutes, or until the top is completely set. Let cool for a few minutes and ENJOY!

Ingredients
  

  • 1 lb Elbow pasta
  • 3 cups water
  • 1 cup Medium cheddar cheese
  • 1 cup Mozzarella cheese
  • 4 tbsp Butter
  • 1/2 cup Milk
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 1/4 tsp Paprika

Method
 

  1.  In the stainless steel inner pot of your Instant Pot, combine the elbow pasta, water, salt, and stir to combine. Place the lid on the Instant Pot, set the valve to the 'sealing' position, and cook on high pressure for 4 minutes. 
  2. Once finished do a quick release. Remove the lid from the Instant Pot, keeping the pot on the 'keep warm' setting, and add the butter. Stir until completely melted, then add milk, the pepper and paprika. Stir until completely combined.
  3. Add the cheese, stirring until melted. Serve mac and cheese immediately. ENJOY!

Notes

 You can put your IP on “keep warm” or on LOW sauté to help melt the cheese. Just make sure you stir constantly and turn the mode off once the cheese is melted that way it doesn’t dry out.

Ingredients
  

  • 1 can 15 oz Pumpkin Puree
  • 2 cups Flour
  • 4 Eggs
  • 1 tsp Baking Soda
  • 2 tsp Baking Powder
  • 2 Tsp Cinnamon
  • 1 cup Vegetable Oil
  • 1 1/2 cups Granulated Sugar
Cream Cheese Frosting
  • 8 oz Cream cheese
  • 8 tbsp Butter
  • 2 tsp Vanilla Extract
  • 1 1/2 cups Powdered sugar
Topping Ideas!
  • Fall Colored Sprinkles
  • Mini Pumpkin Candies

Method
 

  1. Preheat oven to 350º. Line a 15 "x 10" jelly roll pan with parchment paper. 
  2. In a medium bowl, whisk together the dry ingredients: flour, baking soda, baking powder, cinnamon and set aside.
  3. In a large bowl, whisk together wet ingredients: eggs, vegetable oil, pumpkin puree, and sugar, until well combined.
  4. Add dry ingredients to wet ingredients and whisk until well combined.
  5. Pour batter into prepared jelly roll pan. Bake for 20-25 minutes until a toothpick comes out clean.
  6. Let cool completely, then spread the top with frosting. We like to garnish these bars with fall color sprinkles and cute pumpkin candies. ENJOY!
How to Make Cream Cheese Frosting
  1. In a stand mixer, using the whisk attachment, blend together cream cheese, butter, vanilla extract. Then, slowly begin adding powdered sugar and blend until smooth. Make sure to scrape down the bowl as needed.
