Pineapple Upside Down Cake Recipe

Ingredients
  

For the Topping
  • 1/4 cup unsalted butter melted
  • 1/2 cup light brown sugar 
  • 1 20-ounce can pineapple slices (drained)
  • Maraschino cherries
For the Cake
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp  baking powder
  • 1 tsp Vanilla Extract
  • 1/2 tsp Salt
  • 8 tbsp unsalted butter (softened)
  • 1 cup granulated sugar 
  • 2 Eggs (room temperature)
  • 1/3 cup Milk
  • 1/4 cup Reserved pineapple juice

Method
 

  1. Heat oven to 350°F
  2. Pour the melted butter in a 9 inch square pan and then evenly sprinkle with the brown sugar. Arrange pineapple slices over the brown sugar. Place a cherry in center of each pineapple slice.
  3. In a medium bowl, whisk together the flour, baking powder, and salt.
  4. In a large mixing bowl or the bowl of a stand mixer with the whisk attachment, beat butter until creamy. Add the sugar and beat until light and fluffy.
  5. Add the eggs one at a time, beating until well combined. Beat in the vanilla extract.
  6. Beating on low speed, add a third of the flour, milk and pineapple juice beating just until combined. Continue alternating with the remaining flour, milk, and juice until well combined.
  7.  Pour the cake batter over the pineapples. Bake for 45 to 50 minutes or until toothpick inserted in center comes out clean. Let the cake cool for 5-10 minutes and then top the pan with a plate, pan or serving dish, then carefully flip the cake/dish over. Serve warm and ENJOY!

Ingredients
  

Cake
  • 1 1/2 cups All purpose flour
  • 1 tsp Baking soda
  • 1/4 tsp Salt
  • 3 Eggs
  • 1 tsp Vanilla extract
  • 1 cup Milk
  • 1/2 cup Cocoa powder
  • 1 1/2 cups Granulated sugar
  • 2/3 cups Vegetable oil
Chocolate Frosting
  • 1/2 cup Cocoa powder
  • 1 cup Unsalted butter, softened
  • 4-6 tbsp Milk
  • 3 cups Powdered sugar
  • Sprinkles

Method
 

Cake
  1. Preheat oven to 350F degrees. Grease a 9×13 inch pan with non stick spray.
  2. Sift together the flour, salt, baking soda, and cocoa powder into a large bowl and whisk to combine.
  3. In the bowl of a stand mixer add the oil, sugar, vanilla and eggs and beat together. Then beat in the milk.
  4. Carefully beat the dry ingredients into the wet ingredients about 1 cup at a time.
  5. Pour the batter into the prepared pan, and bake for 30 minutes, or until an inserted toothpick comes out clean. Let cool before you add the frosting.
For the Frosting
  1. In the bowl of a stand mixer beat the butter until well softened. 
  2. Shift together the powdered sugar and the cocoa powder then whisk to combine.
  3. Beat the cocoa powder & powdered sugar mixture into the butter about 1 cup at at time, alternating with 1 tablespoon of milk until the desired sweetness and consistency is reached. 
  4. Frost the chocolate cake and decorate with sprinkles. ENJOY!

  • 1 10.5oz can Cream of mushroom soup
  • 2 14.5oz cans Green Beans, drained
  • 2/3 cups Milk
  • 1/4 tsp Pepper
  • 1/4 tsp Salt
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/4 tsp Paprika
  • 2 cups French's Crispy Fried Onions

Method
 

  1. Preheat oven to 350 degrees F.
  2. In a large mixing bowl add mushroom soup, milk, pepper, salt, garlic powder, onion powder, and paprika. Whisk until combined.
  3. Fold in the drained green beans until beans are well coated.
  4. Place green beans into a lightly greased baking dish.
  5. Bake for 20 minutes, then remove from the oven and sprinkle the fried onions over the top. Return to the 350 degree oven for 5 minutes before serving. ENJOY!
