Ingredients
  

Apple Turnovers INGREDIENTS

Baking & Spices

  • 2 tbsp Unsalted butter
  • 1 tbsp All-Purpose Flour for dusting
  • 1/4 cup Brown sugar, lightly packed
  • 1/2 tsp Ground Cinnamon
  • 1/8 tsp Salt
  • 1 lb Puff pastry (2 sheets) thawed according to package instructions
  • 1 egg+ 1 Tbsp water for EGG WASH

Produce

  • 4 Granny Smith apples (4 medium) peeled, cored and diced into 1/3" thick pieces

FOR THE GLAZE

  • 1/2 cup Powered Sugar
  • 2 tbsp Heavy whipping cream

Instructions
 

  • Preheat Oven to 400˚F. Remove puff pastry from the freezer and thaw according to instructions while making and cooling the apple filling.
  • In a deep skillet, melt 2 Tbsp butter over medium heat. Add diced apples and cook, stirring occasionally until softened (5 min).
  • Reduce heat to low and stir in 1/4 cup brown sugar, 1/2 tsp cinnamon, and salt. Continue to simmer 3 minutes until apples are soft and caramelized. Remove from heat and set aside to cool.
  • Use a rolling pin to roll the first sheet of thawed pastry to a square. With a pizza cutter, cut into 4 equal-sized squares. Place cooled apple mixture over half of each square, leaving at least a 1/2" border.
  • Beat together 1 egg and 1 Tbsp water. Brush eggwash lightly on edges of the pastry (just enough to seal), bring the edges together and crimp tightly along the edges with a fork to seal.
  • Transfer to a parchment-lined baking sheet, keeping them at least 1" apart. With a paring knife, cut 2-3 small slits in the top of each turnover. Brush the tops with egg wash and bake 20-23 minutes or until golden and puffed.
  • While turnovers are still warm, stir together powdered sugar and heavy whipping cream (adding to your desired consistency) and drizzle glaze over turnovers.
  • ENJOY!

Notes

To reduce the changes of filling leaking out of pastries, refrigerate uncovered for 20 minutes before brushing with egg wash and baking (this step is optional).

  • 2 lbs Squash zucchini and yellow squash, cut into ¼-inch slices
  • 2 tbsp  Fresh parsley finely chopped

Baking & Spices

  • 2 tbsp Olive Oil
  • 1/2 tsp Pepper
  • 1 1/4 tsp Salt
  • 1/3 cup Panko breadcrumbs
  • 1/3 cup Parmesan cheese
  • 1/4 tsp Garlic powder

Instructions
 

  • Cut yellow squash and zucchini into thin, ¼-inch slices.
  • Sprinkle salt over the zucchini and squash slices. Let sit for 10 minutes and then dab to remove excess moisture with a paper towel.
  • Spray a 9-inch square baking dish with non-stick cooking spray.
  • Alternatively, overlap the zucchini and squash in a row. Drizzle olive oil over the zucchini and squash and then sprinkle with salt and pepper.
  • In a small bowl combine Parmesan cheese, breadcrumbs, and garlic powder. Toss to combine and then sprinkle over the zucchini and squash.
  • Cover baking dish with aluminum foil and bake in preheated 350 degree oven for 25-30 minutes.
  • Remove foil and turn heat to a High broil. Broil for an additional 5-7 minutes, or until breadcrumb topping starts to turn a golden brown.
  • Serve immediately with fresh parsley and enjoy!

Ingredients
  

Baking & Spices

  • 1/4 tsp Salt & Pepper
  • 1 tsp Oregano
  • 1 tbsp Parsley, dry or fresh
  • 1 tbsp Basil, dry or fresh
  • 12 oz Jumbo Shells
  • 24 oz Jar of Marina sauce
  • 3 Garlic, minced

Dairy

  • 15 oz Whole Milk Ricotta cheese
  • 2 cups Mozzarella cheese, plus more for topping
  • 1/2 cup Parmesan cheese

Refrigerated

  • 1 Egg

Instructions
 

  • Cook jumbo shells pasta according to the package instructions until they are al dente. You want the shells to be just slightly under-cooked because they will finish cooking in the oven. Once cooked, strain, and set aside to cool down enough to be handled.
  • Combine ricotta cheese, egg, herbs, garlic, Parmesan cheese, Mozzarella cheese, and seasoning in a mixing bowl. Mix everything well, until all ingredients are evenly incorporated throughout.
  • Spread the marina sauce over the bottom of the 9×13 baking dish and spread it evenly. 
  • Fill each shell with about 1.5-2 tablespoons of ricotta filling and place it in the dish.
  • Sprinkle some Mozzarella cheese and oregano over each shell and bake in a preheated 350 degree oven for about 10-15 minutes or until cheese is melted. Enjoy!

Notes

I don’t like to place shells seam down because the filling often leaks out of the shells, so place shells in the dish seam up.
