Ingredients
  

Baking & Spices
  • 2 cups All purpose flour
  • 1 1/2 cups Granulated Sugar
  • 1 tsp Baking Soda
  • 2 tsp Baking Powder
  • 2 tsp Cinnamon
  • 1 cup Vegetable Oil
  • 15oz Pumpkin Puree
Refrigerated
  • 3 Eggs, room temperature

Method
 

  1. Preheat oven to 350˚F. Grease two loaf pans.
  2. In a large mixing bowl, whisk together the dry ingredients: 2 cups all-purpose flour, 1 1/2 cups sugar, 1 tsp baking soda, 2 tsp baking powder, and 2 tsp cinnamon.
  3. In a second medium mixing bowl, whisk together the wet ingredients: 3 room temperature eggs, 1 cup oil, and pumpkin puree.
  4. Pour wet ingredients over dry ingredients then whisk together until smooth. Divide evenly between 2 prepared loaf pans and bake at 350˚F for 50-55 minutes, or until a toothpick comes out clean (my oven took 50 min). Let cool in the pans for 10-15 minutes.
  5. Enjoy!

Notes

Bake times can vary based on your oven and the color of your baking pan. A darker colored pan will bake faster and a lighter colored pan will take longer to bake.

Zucchini Lasagna Boats

Ingredients

  • 3 Zucchini, Large
Meat
  • 1lb Ground Turkey
Baking & Spices
  • 1 tbsp Olive oil
  • 1 tbsp Parsley, fresh or dry
  • Marinara sauce
  • 1 tsp Italian seasoning
Dairy
  • 15oz Ricotta cheese, whole milk
  • 1/2 cup Parmesan cheese
  • 2 cups Mozzarella cheese

Method
 

  1. Preheat oven to 400 F.
  2. Cut zucchini in half lengthwise and carve out the middle, leaving about 1/4 inch of flesh around the sides so that the zucchinis will still keep their shape. I used a spoon to scrape out the middle.
  3. Brush zucchinis with olive oil and place in a casserole dish.
  4. In a large mixing bowl, mix together ricotta cheese, and parsley, mozzarella and parmesan cheese until combined.
  5. In a skillet over medium-high heat, brown ground turkey and drain any excess grease. Mix ground turkey with marinara sauce.
  6. To assemble zucchini boats: evenly fill zucchinis with cheese mixture so that the bottoms are covered but that the cheese is not higher than the sides of the zucchini. Finish by topping each zucchini with meat and marinara mixture.
  7. Cover baking dish with foil and bake zucchini boats for 30 minutes. Remove foil and sprinkle tops of zucchini boats with mozzarella, then bake uncovered for an additional 5 minutes. When ready cheese should be melted and zucchinis should be soft.
  8. Serve immediately! Enjoy!

  • 2 cups Cherry Tomatoes
  • 1/2 cup Fresh Basil Leaves
  • 1 tbsp Garlic, minced
Baking & Spices
  • 1 tbsp Salt
  • 2 tbsp Olive Oil
  • Angel hair pasta
Refrigerated
  • 1 tbsp Butter, melted

Method
 

  1. Cook the pasta in salted water according to package instructions till al dente. While the pasta is cooking, reserve ½ cup pasta water and set aside.
  2. Heat oil in a pan and add garlic. Sauté the garlic for 2-3 minutes.
  3. Add tomatoes and cook them for a few minutes till soft. Break the tomatoes slightly with the back of a spoon. Season with some salt.
  4. Add reserved pasta water and simmer for 5 minutes till it thickens and becomes saucy.
  5. Add pasta and butter and toss well. Add the basil, toss again till the basil wilts.
  6. Serve immediately.
