Well, my family’s favorite “go to” fair food is the Funnel Cake and these Funnel Cake Bites taste just as good if not better than what you find at your local fair. These are made in the comfort of your own kitchen and can be enjoyed all year round! 

Funnel Cake Bites

Ingredients
  

Baking & Spices

  • 2 tsp Vanilla extract
  • 2 tbsp Sugar
  • 2 cups All purpose flour
  • Vegetable oil for frying
  • 2 tsp Baking Powder
  • Powder sugar
  • 1/4 tsp Salt

Refrigerated

  • 2 cups Milk, I used almond milk
  • 1 Egg

Instructions
 

  • In a large mixing bowl whisk together egg, vanilla extract, milk and sugar
  • Gently stir in flour, baking powder and salt. Stir until flour is combined. Batter will and should be a little bit lumpy.
  • Heat oil on med-high in a deep skillet. When oil is hot, do a test by dropping a bit of batter into the oil. (The batter should begin to fry calmly instantly. If it smokes, sputters or browns quickly the oil is too hot)
  • Use a ice cream scoop and scoop out the batter and drop it into the oil. (work quickly and be careful not to crowd the batter). Fry until golden on both sides.
  • Removed from oil and place a paper-towel lined plate.
  • Sprinkle generously with powdered sugar.
  • Enjoy!

Ingredients
  

For the Dough

  • 1 cup Almond milk, or regular milk
  • 2 cups Self Rising Flour
  • 2 tbsp Brown Sugar
  • 6 cups Water
  • 2 tbsp Baking Soda
  • 1 cup Cinnamon Sugar

For the Dipping Sauce

  • 1 cup Powered Sugar
  • 2 tbsp Milk
  • 1 tbsp Melted Butter
  • 1 tsp Vanilla extract

Instructions
 

Cinnamon Sugar Pretzel Bites

  • In a stand mixer using the dough hook mix together, the flour, milk, and brown sugar until combined.
  • On a floured surface knead the dough, then shape the dough into a ball and divide it into 4 pieces
  • Roll each section into a long strand, cut the strips into bite sized pieces.
  • Bring 6 cups of water to a boil, then stir in baking soda. Turn heat down to a rolling boil.
  • Drop a few dough bites into the water at a time. Turn once or twice, boiling for 30 seconds. Remove pretzel bites with slotted spoon and place on greased baking sheet.
  • Bake pretzels at 425 degrees for 10 minutes or lightly browned.
  • Spread pretzel bites with melted butter, then roll in cinnamon sugar mixture.
  • Enjoy them with the dipping sauce!

Dipping Sauce

  • Add all the ingredients in a small mixing bowl and mix together until combined.

4-Ingredient Healthier Peanut Butter Cups

Ingredients
  

Chocolate Layer

  • 1 cup Chocolate Chips
  • 1 tbsp Melted Coconut oil

Peanut Butter Layer

  • 1/2 cup Natural Peanut butter
  • 1/4 cup Honey
  • 2 tbsp Melted Coconut Oil

Instructions
 

  • Line a muffin tin with paper . The recipe should make about 10-12 peanut butter cups depending on how thick you make your layers.
  • Melt chocolate chips and coconut oil for 1 minute in the microwave, stir and continue heating on 30 second intervals, until chocolate chips have melted and chocolate is smooth.
  • Using a teaspoon pour enough chocolate (about 1-2 teaspoons) to cover the bottom of the liner into each liner. Place tray into the freezer for about 5-10 minutes for the chocolate to set.
  • In another bowl, add peanut butter, honey, coconut oil. Microwave for about 15 – 20 seconds or until mixture is slightly melted and pourable. Stir to combine.
  • Remove cups from the freezer and pour peanut butter mixture evenly over each cup. Place back in the freezer to set for about 5 minutes.
  • Pour remaining chocolate over each cup, using just enough to completely cover the peanut butter layer. At this point you can also sprinkle flaked sea salt on top of the chocolate if you want!
  • Place tin back in the freezer for about 30 minutes to an hour to set completely. Remove from freezer and store in the refrigerator until ready to serve.

Notes

Store leftovers in the fridge. They should last at least 5-7 days. For longer storage, store cups in the freezer for up to 2 months.
