Ingredients
  

  • 6 slices thick-cut Texas toast bread
  • 4 Eggs
  • 1 cup Milk
  • 1/4 tsp Salt
  • 1 tsp Cinnamon
  • 2 tbsp Melted Butter
  • 2 tbsp Sugar
  • 1 tsp Vanilla Extract
  • Maple syrup for serving

Instructions
 

  • Preheat the oven to 350°F. Grease a baking sheet generously with cooking spray. Cut each slice of bread into three sticks 
  • In a large mixing bowl, whisk together the eggs, milk, cinnamon, sugar, butter, and vanilla extract. Dip each stick of bread in the mixture, coating it on all sides, then shake off the excess and arrange it on the baking sheet. Repeat the dipping process, arranging the toast sticks on the baking sheet so that they aren’t touching.
  • Bake the French toast sticks in your preheated oven for 20 minutes, making sure to flip them half way.
  • Remove from the oven and serve warm with maple syrup. ENJOY!

Notes

  • They’re freezer-friendly!
  • To reheat, remove frozen French toast sticks from the freezer and microwave for 30 to 60 seconds until warmed through.

Ingredients
  

  • 1 Small Onion, diced
  • 12 oz Peas, fresh or frozen
  • 1 lb Pasta
  • 1 tbsp Olive oil, plus more for drizzling
  • 1/2 cup Freshly grated Parmesan cheese, plus more for serving
  • 2.5 cups Vegetable Broth
  • 1 tsp Salt,
  • 1/2 tsp Pepper, and Salt
  • 1/4 tsp Garlic Powder and Paprika

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until the onion has softened and is turning translucent, for about 5 minutes. Add the peas and cook stirring frequently about 1 minute. 
  • Then add vegetable broth, raise the heat, bring to a boil and stir in pasta and 1 tsp of salt. Reduce the heat, cover with a lid, and cook your pasta in the starchy water. During the cooking time make sure to stir often until the broth is absorbed, if not it will stick to the bottom. The broth should barely cover the pasta, but it's fine, add extra broth gradually only if needed.
  • Cook until ready but firm to the bite. Turn off the heat and stir in freshly grated parmesan cheese until melted. Taste and adjust the seasoning.
  • Serve immediately with a drizzle of olive oil and extra parmesan cheese if you like. ENJOY!
