Ingredients
  

  • 2 Eggs
  • 2 cups Flour
  • 1 tsp Vanilla extract
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 1/2 cup Semi Chocolate chips (plus top with more)
  • 1 cup Butter
  • 1/2 cup Brown sugar
  • 1/4 cup Granulated Sugar
  • scoops of vanilla ice cream

Method
 

  1. Preheat oven to 350°F.
  2. In a large bowl, mix butter, sugars and vanilla until well blended. Mix in eggs and blend until you get a light and fluffy texture.
  3. In a small bowl whisk together flour, baking soda and salt. Slowly mix into wet ingredients until combined.
  4. Then fold in 1/2 cup of the chocolate chips.
  5. Generously grease a cast iron skillet with butter. I used a 10'' cast iron skillet.
  6. Spread cookie dough into prepared skillet.
  7. Press about 1/2 cup of chocolate chips scattered all over the top of the giant cookie.
  8. Bake for 15-20 minutes or until browned on the edges and light browned on top. 
  9. When done, remove from oven and let cool for at least 5-10 minutes. Slice like a pie and serve warm with a scoop of vanilla ice cream. ENJOY!

Notes

Cover with foil if you notice edges starting to get too dark early on in the baking.

Instant Pot Cheesecake Recipe

Ingredients
  

Crust
  • 1 cup Graham crackers
  • 1/2 cup Melted Butter
  • 1 tbsp Granulated Sugar
Cheesecake Filling
  • 16 oz Cream Cheese
  • 2 Eggs
  • 1/2 cup Sugar
  • 2 tsp Vanilla Extract
  • 1/4 cup All Purpose Flour
  • 1/4 cup Sour cream
Topping
  • Cherry Pie Filling

Method
 

  1. Set trivet inside your Instant Pot, add 1 1/2 cups of water to the bottom of the insert.
Crust
  1. In a large mixing bowl, add in the graham cracker crumbs, melted butter, and sugar. Stir with a fork.
  2. Press the crumbs in the bottom and sides of a 7-inch springform pan.
  3. Place into the freezer for 10 to 15 minutes and work on the filling.
Filling
  1. In a large mixing bowl, add in the cream cheese and sugar. Beat with a hand mixer until smooth.
  2. Add eggs and mix just until combined. Making sure to not overmix.
  3. Add flour and sour cream and mix just until combined. Lastly, add vanilla extract and stir in with a spatula.
  4. Pour the cheesecake batter over the prepared crust.
  5. Pour water in your instant pot and place pan carefully on the trivet/rack in your Instant Pot. Close the lid and set the valve to "sealing" position.
  6. Set pressure to high and the time to 30 minutes.
  7. Once the timer is up, do not release pressure but let it release naturally. Mine took about 20-30 minutes. When the valve dropped, carefully open the lid away from your face and let any remaining steam escape. Using a paper towel, gently blot the surface of your cheesecake from any built up condensation.
  8. Take the cheesecake out. Let it cool to room temperature and then place in the fridge to chill overnight or at least 4 hours.
  9. Add pie filling to the top and serve. ENJOY!

Notes

To cut perfect slices, clean the knife after each cut.

Ingredients
  

Apple Turnovers INGREDIENTS
Baking & Spices
  • 2 tbsp Unsalted butter
  • 1 tbsp All-Purpose Flour for dusting
  • 1/4 cup Brown sugar, lightly packed
  • 1/2 tsp Ground Cinnamon
  • 1/8 tsp Salt
  • 1 lb Puff pastry (2 sheets) thawed according to package instructions
  • 1 egg+ 1 Tbsp water for EGG WASH
Produce
  • 4 Granny Smith apples (4 medium) peeled, cored and diced into 1/3" thick pieces
FOR THE GLAZE
  • 1/2 cup Powered Sugar
  • 2 tbsp Heavy whipping cream

Method
 

  1. Preheat Oven to 400˚F. Remove puff pastry from the freezer and thaw according to instructions while making and cooling the apple filling.
  2. In a deep skillet, melt 2 Tbsp butter over medium heat. Add diced apples and cook, stirring occasionally until softened (5 min).
  3. Reduce heat to low and stir in 1/4 cup brown sugar, 1/2 tsp cinnamon, and salt. Continue to simmer 3 minutes until apples are soft and caramelized. Remove from heat and set aside to cool.
  4. Use a rolling pin to roll the first sheet of thawed pastry to a square. With a pizza cutter, cut into 4 equal-sized squares. Place cooled apple mixture over half of each square, leaving at least a 1/2" border.
  5. Beat together 1 egg and 1 Tbsp water. Brush eggwash lightly on edges of the pastry (just enough to seal), bring the edges together and crimp tightly along the edges with a fork to seal.
  6. Transfer to a parchment-lined baking sheet, keeping them at least 1" apart. With a paring knife, cut 2-3 small slits in the top of each turnover. Brush the tops with egg wash and bake 20-23 minutes or until golden and puffed.
  7. While turnovers are still warm, stir together powdered sugar and heavy whipping cream (adding to your desired consistency) and drizzle glaze over turnovers.
  8. ENJOY!

Notes

To reduce the changes of filling leaking out of pastries, refrigerate uncovered for 20 minutes before brushing with egg wash and baking (this step is optional).
