Ingredients
  

Cookies

  • 2 cups Flour
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1 15oz Can of pumpkin puree
  • 1 Egg
  • 1/2 tsp Vanilla extract
  • 1/2 cup Vegetable oil
  • 1 cup Brown Sugar
  • 1 tsp Cinnamon

Filling

  • 4oz Cream cheese
  • 1/4 cup Butter, softened
  • 1 1/2 cups Powder sugar
  • 1 tsp Vanilla extract

Instructions
 

Cookies

  • Preheat the oven to 350F. Line baking sheet with parchment paper.
  • In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  • In another mixing bowl, whisk together the pumpkin puree, sugar, oil, eggs, and vanilla, until well combined. Pour into the dry ingredients and stir until well combined.
  • Using a small ice cream scoop, scoop the dough onto the prepared pan about 1 inch apart.
    Bake for 12 to 15 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and transfer to a wire cooling rack and let cool completely.

Filling

  • In a large mixing bowl, beat the butter, cream cheese, and vanilla together on medium-low speed until smooth.
  • With the mixer on low, gradually beat in the powdered sugar until fully combined. Transfer to a piping bag if desired.
  • Pipe or spread frosting on the flat side of half of the cookies. Press another cookie onto the frosting creating sandwiches. Chill for 30 minutes before serving. Store whoopie pies covered and refrigerated for up to 1 week. ENJOY!

  • 1/2 cup Rolled oats, old fashioned oats
  • 2/3 cups cups Almond milk
  • 1 tsp  maple syrup
  • 1 tbsp Chia seeds
  • 1 tbsp Pumpkin Puree
  • Cinnamon
  • Chopped Pecans

Instructions
 

  • In a mason jar add in all the ingredients. Stir until well combined then cover and refrigerate overnight.
  • To serve, top with chopped pecans and enjoy!

Ingredients
  

  • 2 lbs  Ground Beef
  • 10 Large flour tortillas
  • 15 oz Jar of Nacho Cheese
  • 6 Corn tostadas
  • 1 cup Sour cream
  • 1 cup Lettuce, shredded
  • 1 Large tomato, diced
  • 1 cup Shredded Cheese
  • Season meat with Favorite seasoning or with taco seasoning
  • 1 tbsp Olive oil

Instructions
 

  • Preheat the oven to 425 F.
    In a skillet, cook the ground beef with the taco seasoning packet or with favorite seasonings. Drain excess fat and set aside to cool slightly.
  • Arrange 8 Large Tortillas on baking sheet. Spread Nacho cheese over the flour tortillas and spread in an even layer, then cover the cheese with the cooked ground beef.
  • Add tostadas on top and spread sour cream on each tostada.
    Top with shredded lettuce, tomato, and shredded cheese over the top.
  • Place the remaining two flour tortillas into the center of the filling mixture, slightly overlapping. Carefully fold the edges of the tortilla towards the middle of the pan so they cover the edges of the two middle tortillas. Then brush the top with olive oil.
  • Use a second sheet pan and place it over the crunchwrap to press it down and hold in place.
    Bake for 20 minutes in the oven covered and then uncover and bake for additional 5 minutes.
  • Remove from the oven and cool for at least 10 minutes before slicing into pieces. Serve with extra sour cream or your favorite taco sauces and ENJOY!
