Homemade Waffles

Ingredients
  

  • 2 cups All Purpose Flour
  • 1/4 tsp Salt
  • 1 tbsp Baking Powder
  • 1 tbsp Granulated Sugar
  • 2 Eggs
  • 8 tbsp Butter, melted
  • 1 3/4 cups Milk
  • 1 tsp Vanilla Extract

Method
 

  1. In a large mixing bowl, combine the flour, baking powder, sugar and salt. Mix together and place aside.
  2. In a medium bowl combine the milk, butter, eggs, vanilla extract. Mix Together.
  3. Add the wet ingredients to the dry ingredients and mix together.
  4. Preheat your waffle iron and spray with cooking spray or rub a little melted butter on.
  5. Pour onto hot iron and cook the waffles according to the directions on your waffle maker.
  6. Serve topped with pure maple syrup and butter or your favorite fruit.

Instant Pot Spaghetti

Ingredients
  

  • 1 pound Ground Beef
  • 1 tbsp Olive Oil
  • 8 ounces Uncooked spaghetti
  • 1 24 oz  Jar marinara sauce
  • 1 tsp Dried Italian seasoning
  • 2 cups Water
  • 1/4 tsp Pepper
  • 1/2 tsp Salt
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • Grated Parmesan cheese, for serving (optional)

Method
 

  1. Turn Instant Pot to saute mode. Once heated add the olive oil and ground beef. Break the beef up with a wooden spoon and cook until browned. Turn Instant Pot off.
  2. Add the Italian seasoning, onion powder, garlic powder, salt, pepper and water. Stir until well combined, scraping up any browned bits from the bottom of the pot.
  3. Break the spaghetti noodles in half and lay them in the pot in about 5 parts, with each part laying in a different direction (this is to prevent the spaghetti from sticking together).
  4. Then pour the marinara sauce over the spaghetti. Do not stir.
  5.  Seal the pressure cooker. Cook at high pressure/manual for 7 minutes.
  6. Carefully do a quick release. Remove lid, stir. You will see some liquid in the pot. This will absorb after just a few minutes. Wait for 3-5 minutes and then serve.
  7. Serve with parmesan cheese and ENJOY!

Notes

If using whole wheat spaghetti with a package cook time of 7-9 minutes. Cook at high pressure/manual for 5 minutes. If using regular spaghetti with a package cook time of 9-11 minutes, Cook at high pressure/manual for 7 minutes.

Ingredients
  

  • 1/2 cups Cooked Chicken, shredded (I used Rotisserie chicken)
  • 1/2 cup Zucchini, grated
  • 1 Red Bell Pepper
  • 1/4 cup Green onions, chopped
  • 1/4 cup All Purpose flour
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 1 Egg
  • 1/3 cup Carrots, grated
  • 2-3 Tbsp Olive Oil, for frying

Method
 

  1. In a large bowl, mix all ingredients until well incorporated.
  2. In a large skillet add 2-3 tbs. of olive oil on medium high heat. Then using a spoon or ice cream scooper, scoop about a tablespoon of batter onto the pan for each Pattie. Use a spoon to flatten them into a patty form.
  3. Cook until golden brown and flip on the other side and cook for a few minutes.
  4. Serve with your favorite sauce, and ENJOY!

Notes

  • I love using store bought rotisserie chicken, It’s delicious and will save so much time.
  • Don’t forget to squeeze out the water from the zucchini after grating.
