Ingredients
  

Produce
  • 2 lbs Squash zucchini and yellow squash, cut into ¼-inch slices
  • 2 tbsp  Fresh parsley finely chopped
Baking & Spices
  • 2 tbsp Olive Oil
  • 1/2 tsp Pepper
  • 1 1/4 tsp Salt
  • 1/3 cup Panko breadcrumbs
  • 1/3 cup Parmesan cheese
  • 1/4 tsp Garlic powder

Method
 

  1. Cut yellow squash and zucchini into thin, ¼-inch slices.
  2. Sprinkle salt over the zucchini and squash slices. Let sit for 10 minutes and then dab to remove excess moisture with a paper towel.
  3. Spray a 9-inch square baking dish with non-stick cooking spray.
  4. Alternatively, overlap the zucchini and squash in a row. Drizzle olive oil over the zucchini and squash and then sprinkle with salt and pepper.
  5. In a small bowl combine Parmesan cheese, breadcrumbs, and garlic powder. Toss to combine and then sprinkle over the zucchini and squash.
  6. Cover baking dish with aluminum foil and bake in preheated 350 degree oven for 25-30 minutes.
  7. Remove foil and turn heat to a High broil. Broil for an additional 5-7 minutes, or until breadcrumb topping starts to turn a golden brown.
  8. Serve immediately with fresh parsley and enjoy!

Ingredients
  

Baking & Spices
  • 1/4 tsp Salt & Pepper
  • 1 tsp Oregano
  • 1 tbsp Parsley, dry or fresh
  • 1 tbsp Basil, dry or fresh
  • 12 oz Jumbo Shells
  • 24 oz Jar of Marina sauce
  • 3 Garlic, minced
Dairy
  • 15 oz Whole Milk Ricotta cheese
  • 2 cups Mozzarella cheese, plus more for topping
  • 1/2 cup Parmesan cheese
Refrigerated
  • 1 Egg

Method
 

  1. Cook jumbo shells pasta according to the package instructions until they are al dente. You want the shells to be just slightly under-cooked because they will finish cooking in the oven. Once cooked, strain, and set aside to cool down enough to be handled.
  2. Combine ricotta cheese, egg, herbs, garlic, Parmesan cheese, Mozzarella cheese, and seasoning in a mixing bowl. Mix everything well, until all ingredients are evenly incorporated throughout.
  3. Spread the marina sauce over the bottom of the 9×13 baking dish and spread it evenly. 
  4. Fill each shell with about 1.5-2 tablespoons of ricotta filling and place it in the dish.
  5. Sprinkle some Mozzarella cheese and oregano over each shell and bake in a preheated 350 degree oven for about 10-15 minutes or until cheese is melted. Enjoy!

Notes

I don’t like to place shells seam down because the filling often leaks out of the shells, so place shells in the dish seam up.

Baking & Spices
  • 2 cups All purpose flour (or whole wheat flour)
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 2 tbsp Olive Oil
Other
  • 3/4 cup Warm Water

Method
 

  1. In a large mixing bowl, add flour, baking powder and salt. Stir with a fork to combine.
  2. Add water and oil and stir to combine until a dough forms.
  3. Transfer the dough onto a well-floured work surface and knead for about 5 minutes (or 15 minutes if using whole wheat flour), until the dough is smooth and elastic.
  4. Roll the dough into a ball, cover it with a clean kitchen towel and let it rest for 30 minutes (or up to 2 hours)
  5. Divide the dough into 8 separate pieces and roll each piece into a ball.On a lightly floured surface, roll each dough ball into a circle. (While you're rolling out each ball, you can place the rolled tortillas on top of a clean kitchen towel.)
  6. Heat a large nonstick skillet or griddle over medium-high heat. Place a tortilla on the skillet and cook for 30-45 seconds, or until small bubbles start to form. Flip it over and cook for another 30-45 seconds.
  7. Enjoy!
