Creamy Mashed Potatoes Recipe

  • 3 lbs  (8 medium) russet potatoes, peeled
Baking & Spices
  • 2 tsp Salt or to taste (we used sea salt)
  • 2 tsp Pepper
Dairy
  • 1 1/4 Cups Hot milk we used whole milk
Refrigerated
  • 8 tbsp Unsalted butter, at room temperature (not melted)

Method
 

  1. Peel potatoes. If you want the smoothest potatoes possible, remove the little knots from the potatoes with a small spoon or the tip of a potatoes peeler. Place potatoes in a large pot (5 Qt+) and cover potatoes with cold water. Bring to a boil and cook partially covered until easily pierced with a knife (boil 25-30 min depending on the size of your potatoes; mine took 30 min).
  2. Drain well and transfer to the bowl of your stand mixer. Grab the whisk attachment and mash potatoes lightly by hand to break them up. Fit mixer with whisk attachment and start on low speed 30 sec then increase to medium and slowly drizzle in the HOT milk.
  3. With mixer on, add softened butter 1 Tbsp at a time, waiting a few seconds between each addition. Potatoes will be whipped and fluffy. Finally add salt and pepper to taste. ENJOY!

Ingredients
  

Baking & Spices
  • 1 Homemade pie crust (2 disks)
  • 1 1/2 tsp Cinnamon
  • 3 tbsp All Purpose Flour
  • 1 cup Granulated Sugar
Produce
  • 6 Granny Smith Apples Peeled & Cored,(thinly sliced)
Refrigerated
  • 8 tbsp Unsalted Butter
Egg Wash
  • 1 Egg
  • 1 tbsp Water
Other
  • 1/4 cup Water

Method
 

  1. Melt butter in a small saucepan over medium heat. Whisk in 3 Tbsp flour then simmer for 1 minute, whisking constantly. Whisk in 1/4 cup water, 1 cup sugar and bring to a boil. Reduce heat and continue simmering 3 minutes, whisking frequently then remove from heat.
  2. Peel, remove cores and thinly slice 6 apples and place them in a large bowl. Sprinkle the top with 1 1/2 tsp cinnamon and toss to combine. Pour the sauce over the apples and stir to coat the apple slices.
  3. Sprinkle a surface with flour and roll out bottom pie crust to a 12" diameter circle. Wrap it around your rolling pin to transfer it to the 9" pie dish. Add apple mixture, mounding slightly in the center and being careful not to get the filling on the edges which would make it difficult to seal.
  4. Roll second crust into an 11" round and cut into 10 even thickness strips using a pizza cutter. Arrange strips in a woven lattice pattern over the top (see video tutorial). Beat together 1 egg and 1 tbsp water and brush the top with egg mixture.
  5. Bake at 425˚F for 15 minutes. Reduce the heat to 350˚F and continue baking another 45 minutes or until apples are soft and filling is bubbling through the vents. Let cool for 1 hour before serving. ENJOY!

Ingredients
  

Meat
  • 8 Slices of bacon, I used Turkey Bacon
Produce
  • 3 Cloves of Garlic, minced
  • 1 Yellow onion, small
  • 3 pounds Potatoes peeled and diced to 1 inch size cubes (use waxy potato like Gold Potatoes)
Canned Goods
  • 4 cups Chicken Broth
Dairy
  • 1 cup Heavy cream
  • 1 cup Milk, I used almond milk
  • 1/3 cup Sour cream
  • 1 cup Cheddar Cheese, Shredded
Baking & Spices
  • 3 tbsp All purpose Flour
  • 1/4 tsp Pepper
  • 1 1/2 tsp Salt
Optional Toppings:
  • Diced Bacon
  • Diced Green onion
  • Sour cream
  • Shredded cheese

Method
 

  1. Add the bacon to a dutch oven or pot and cook over medium high heat until the bacon is crispy. Remove the bacon to a bowl and set aside, leave the grease in the pot. If your using Turkey bacon there will not be any grease just add oil to pot.
  2. Add the diced onion and cook until softened and translucent. Add the minced garlic and cook for an additional 30 seconds or until fragrant.
  3. Stir in the flour until a paste forms and allow this to cook for about 2-3 minutes until a light golden color. This cooks the flour.
  4. Pour in the chicken broth, milk and cream. Add in the diced potatoes, salt and pepper. Stir to combine. Bring the pot to a simmer and cook stirring occasionally until the potatoes are softened and easily mashed.
  5. Turn heat off and using an immersion blender, blend the soup until most of the potatoes are blended and the soup is creamy. IF you don’t have an immersion blender then carefully pour portions of the soup into a blender or food processor and blend until smooth. Return soup to the pot after blending.
  6. With the heat still off, stir in the sour cream and shredded cheese. Return the bacon to the soup. Stir to combine.
  7. Serve warm with any additional toppings of your choice. ENJOY!
